var majorCaption  = new Array( 'What can we grow besides veggies and fruit to complete our diets in the North Kootenay Region? Here we have flax in bloom, a very easy crop to grow, just watch for too many nutrients as the plants will “lodge” meaning fall over.', 'Another view of flax. Flax is very high in an essential fatty acid known as omega 3. Important to healthy brain, immune, hormones, and digestion systems, it has been coveted as a super food. Flax is also very high in fiber and makes your whole digestive system sing!', 'Painted mountain corn is usually hung on walls as a symbol of harvest time, but it is actually one of the best grains for growing here with a very high nutritional content of protein, about 17%. ', 'Painted mountain corn is also very yummy as a fresh corn, still giving you a good shot of protein in every buttery bite.', 'As most corn is highly hybridized and genetically modified, painted mountain corn is also a rare heritage breed being one of the oldest types and having recently been tested for no genetic modification contamination. (This particular plant shown) ', 'This corn is being passed all over the world to communities that live in remote, mountainous regions as we will be some of the first communities to possibly face a lack of access to the global food system that feeds us.', 'Reminds me of a muppet character! This is truly one of the most beautiful plants. Vibrant reds, yellow, blue, orange or mixes of all are what the cobs look like when mature.', 'Flax close to harvest.  The flowers have gone to seed and when the patch is 70%  brown globes, cut and hang to dry to finish curing.', 'Multi hued quinoa is another fantastic protein/grain crop for us to grow in the North Kootenay region. It is very tolerant to moist, cool temperatures other than at harvest. ', 'Two cautions with growing quinoa, first is to plant early so that harvest can take place before the fall rains hit. The grains can sprout right on the stalk. The second is that one of our most common weeds, ‘lamb’s quarters’ is of the same family and can cross so you must be sure to weed any lambs quarters out of your garden if growing quinoa.', 'When harvesting quinoa, there is also an extra step before cooking up a yummy dish with it. Quinoa has a soapy like coating on it’s outer hull that commercial operations will use either solvents or special machinery to remove. A great home tip, from Dan Jason of Salt Spring Seeds, is to take a small amount, out in a blender with water and blend. The suds will appear, drain and repeat until no more suds appear. For larger amounts, grab a pillow case and throw them in the washing machine on a cold cycle.', 'Fava beans are very easy to grow and high in protein. They also make a great cover crop, quickly building nutrients in the soil.', 'Peas are one of the best garden crops for so many reasons. They build nutrients in the soil, they are high in protein, you can pick there early shoots and eat as salad, they are cold tolerant and can even withstand a frost or two.', 'Most important- they are superbly yummy!', 'Quinoa hanging to dry.' );
